confession:

ever since I've been making these humming bird cupcakes for everyone I feel like my cupcake making skills have gone down.

weird?

The bigger the better!

My mother and I recently went to a cupcake class at this wonderful store called Sur La Table, and as we were there I found these really wonderful baking cups!



So, right away I needed to test them out!
and they work like wonders :)

Made a big cupcake for my step-mom and I cant wait to see how it taste!

More of the bird.

So, the Hummingbird cupcakes have definitely raised to the top since their arrival.
Tomorrow is my lovely friend Laura's birthday, and so I made her favorite.





Ps. I went to Kroger today for my supplies and I found these super wonderful cupcake cups, and they help the baking process! I'm in love!

A dozen.



I never really make a dozen cupcakes, but that's what was ordered, so I had many extras. :)

They were just chocolate cupcakes with my original frosting. The pink didn't come out how I wanted it but I thought it still looked cute.

Hope they liked it!

Strawberry Shortcake Cupcakes




Had a very busy weekend filled with cupcakes and dog sitting, but it was a good one, and still not over!

But I had an order to make some strawberry shortcake cupcakes for my aunt and they were gone in seconds! I used a recipie from a very wonderful blog called Sticky Gooey Creamy Chewy. Click here for recipie

I made my own vanilla cupcakes, but did use the Strawberry Gelee and her Strawberry frosting. I was a bit upset how the frosting came out though, not as hard as I wished, something must have gone wrong somewhere, so I didn't pipe it, but still came out tasting great.






Like I said, they went fast.

Definitely going to be a specialty of mine!

How to eat a cupcake.

(Learned this from a Cake Boss episode)

All you do is cut off the bottom with your fingers, or a knife/fork/whatever, and you just put it on top!

Makes it easy to eat, and it makes you look really cool :)

Recipe Book

Went to Office Max today, and saw this super cute composition book. Of course I had to have it, and I've decided to make it into my Pastelito recipe book!



Now I just need to come up with recipes to fill it up!

Cheese Cake!!!

Roger's mom is an awesome cheese cake maker so I asked her for all of her secrets!

With a little bit of cream cheese, condensed milk, vanilla, eggs, lime juice, and 350 heat, I was finished!

And it came out perfect :)




With knowing how to master cheese cake, I am going to make cheese cake cupcakes, and red velvet cake with a layer of cheese cake! Mmmm!!

I went to Half Price Books the other day to buy a summer reading book, and I ran into the food section and found these awesome books for so cheap!!

Only $3 and $5! I couldn't believe it. Definitely going back again for more.

Purquoise (Purple & Turquoise)

My cousin Lorraine's birthday party is tomorrow, and I received an order to bake her some cupcakes. Right away when I heard she wanted purple and turquoise colors I was excited. I already had a plan of action and everything! (Luckily, my plan followed through just how I expected:)


So, I went shopping this morning and began making her cupcakes.



I was really excited about these little fondant hearts I cut out, with pre made fondant and just panted some silver dust on top, it was really cute.


And during my cupcake baking I was worried if I'd have enough frosting for all of the cupcakes. Luckily, with every last scoop, I did :)

Everything came out fantastic!














Now they are all packed and ready to go :)

Frost away



When I start to frost I make a mess no matter the occasion. I love getting into my frostings that it ends up in many places. Luckily, I can clean up pretty well.

I’m still very new to this but I’ve tried many styles of decorating cupcakes, even if they always aren’t perfect…






I’ll be posting my challenges and accomplishments of the many cupcakes I will soon be making, in hopes of every time taking a bigger step to success!
